Ingredients (serves 2)

  • 2 avocados
  • 2 tbsp crème fraîche
  • 1 egg
  • juice of 1/2 lemon
  • 70 g shredded Gruyère cheese



  • Slice the avocados in half lengthways, remove the stones and scoop out the flesh into a bowl. Keep the skins to one side
  • In a bowl, mash together the flesh and the lemon. Add the beaten egg, crème fraîche and salt and pepper to taste
  • Divide the mixture into the avocado skins
  • Sprinkle some shredded cheese over the stuffed avocados, then place in the oven at 200°c for 20 mins or until the cheese has melted and is starting to turn brown
  • Serve warm with a salad and a slice of smoked salmon
