Soupe de fraises
Ingredients for 4
• 500 gr of strawberries
• 1 lime
• 1 small piece of ginger root
• 100 gr of sugar
• 4 small tips of mint or verbena (for decoration)
Preparation
1 Peel the ginger, slice thinly then cut into small pieces
2 Wash the lime carefully then peel it.
3 In a small saucepan place the sugar with around 40 cl of water, the ginger and the lime zest.
4 Simmer on a low heat. During this time, wash the strawberries then drain.
5 Mix in a blender until it becomes a dense liquid.
6 When the sugar syrup has thickened (after 10-15 min) filter to remove the ginger and lime and pour into the strawberry juice.
Set aside in a cool place. Serve chilled in large stemmed glasses or soup bowls with a little mint or verbena.
