Banana Bread with Walnuts and Crème Fraîche (Languedoc Sun N°35 / Provence Sun N°8)

Healthy children’s snacks to celebrate ‘La Rentrée’.

It’s that time of year again. La Rentrée is upon us and after a well-deserved summer vacation our children are returning to school again, rested and ready for new challenges. Help them start the new school year off on a healthy note by offering them nutritious snacks they’ll surely love.
Even after a healthy breakfast or lunch, chances are that your child might need a little refueling. Instead of offering them highly caloric snacks, why not opt for something wholesome and homemade? The following snacks are filled with fruit and healthy fibres making them the perfect treats for your little learners. And the best part? They’re easy and fun to make together with your children! So put on those aprons and get baking!

 

Ingredients to makes 10-12 slices
250 g crème fraîche
150 g raw demerara sugar
2 ripe bananas, mashed
175 g whole wheat flour
1 ½ tsp baking powder
1 tsp ground cinnamon
90 g walnuts, roughly chopped
75 g soft butter
2 eggs
1 ½ tsp vanilla extract
75 g flour
½ tsp bicarbonate of soda
¼ tsp ground nutmeg
a pinch of salt

Preparation : 

  • Preheat the oven to 180°C and line a cake pan with baking paper.
  • Using a hand-held or standing mixer, beat the crème fraîche, butter and sugar (cassonade).
  • Add in the eggs one by one while continuing to beat.
  • Add in the mashed bananas and vanilla extract and give everything a final whisk.
  • In another bowl, combine the flours, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt.
  • Add the walnuts and stir to combine.
  • Add the wet ingredients to the dry and gently fold to combine.
  • Pour the batter into the prepared cake pan and bake for 50-60 minutes or until a wooden skewer inserted in the center comes out clean.
  • Allow the cake to cool completely on a wire rack before cutting into slices.
