Tian de légumes du soleil (Languedoc Sun N°22) PDF Print E-mail

400 gr aubergines
500 gr tomatoes
300 gr courgettes
1 onion
6 cloves of garlic
butter
1 spoon of olive oil
salt and pepper
herbes de Provence

PREPARATION

Pre-heat the oven at 190°C (thermostat 7).

Butter a large oven-proof dish.

Peel the garlic cloves and onion and chop small.

Rinse the vegetables then cut them into rounds of equal thickness and if possible of the same diameter.

In a pan, lightly fry the garlic and onion until golden brown.

Arrange the vegetables beginning with a slice of tomato then courgette, tomato, aubergine and so on.

Add salt and pepper, pour over the olive oil and sprinkle the herbs. Sprinkle parmesan on top.

Bake in oven for 40 min.
