Recipe kindly contributed by Laurent Plantier, le Pradinas in Mialet, Logis de France du Gard. www.logis-de-france-gard.com, an original way to discover the Gard INGREDIENTS 4 smoked salmon slices 4 small courgettes 3 eggs 20 cl liquid crème fraîche Chopped garlic, parsley, mint and chives,(around 20 gr of each) pepper olive oil 8 small ramekin dishes.
PREPARATION Wash the courgettes, then grate them roughly. Soften them in a little olive oil over a gentle heat and add the garlic, pepper, mint, and chives. Once cooked remove from the heat. Beat the eggs with the crème fraîche, and add the cooked courgettes. Line each dish with some of the salmon and add the mixture. Cook in a low oven at 150° (4) for 20-25 mn. Leave to cool. Turn each individual flan onto a plate and decorate with a slice of lemon, some tomato and a radish.You can also use a deep, oven-proof dish. In this case the same proportions would serve. This dish is equally good cold or warm.
