Queen Mother Cake

INGREDIENTS
170g (6ozs) dates 110g (4ozs) sugar 50g (2ozs) butter 1 beaten egg 1 tsp vanilla 2 tbsp liquid cream 110g (4ozs) sifted flour 1 tsp baking powder 1 tsp. Bicarbonate of soda ½ tsp salt 85g (3ozs) chopped walnuts
PREPARATION
Grease 30cm x 22.5cm (12” x 9”) tin.
Pour ¼ litre boiling water over the dates and Bicarbonate of soda. Add the ingredients to the date mixture and bake in moderate oven (180°C) for 40 minutes.
Bring to the boil 5 tablespoons of brown sugar + 2 tablespoons of liquid cream and beat for 3 minutes. Spread on the cake and sprinkle with finely chopped walnuts.
