Pumpkin with rosemary
INGREDIENTS
4 tbsp olive oil 1,5 kg pumpkin or butternut squash (unpeeled weight), peeled and cubed 4 garlic cloves, crushed 6 rosemary sprigs 1/2 red chilli, finely chopped
PREPARATION
Heat the oil in a large frying pan and fry the pumpkin or squash until golden. Remove from the pan and set aside. Add the garlic, rosemary and chilli to the pan and fry for a minute or two. Stir in the pumpkin cubes carefully and then cook over a high heat for a few minutes or until the pumpkin is soft. Season to taste.
